Ingredients
- 3 Sweet dumpling or acorn squash; cut in half
- 1 lb Italian sausage
- 1 med onion chopped
- 2 celery stalks chopped
- 1 Apple; chopped
- 2 garlic cloves; minced
- 2 cups sliced kale, chard, tatsoi or First Generation Farm's braising mix
- 2 cups cooked rice
- 3/4 grated Parmesan cheese
Directions
Most commonly known as summer squash, yellow varieties of squash provide various health benefits. This vegetable is a nutritional power pack! Loaded with:
• vitamins A, B6, and C
• folate
• magnesium
• fiber
• riboflavin
• phosphorus
• potassium
Yellow squash is also rich in manganese, a mineral that helps boost bone strength and the body’s ability to process fats and carbohydrates.
If you don’t already love squash, this lovely side dish will surely spark your tastebuds.

Preheat oven to 375 degrees

Halve squash and clean seed cavity

Salt baking dish and place squash face down in baking dish. Cook 30 to 40 minutes until soft.

While squash is cooking, cook Italian sausage.

Add onion, celery and apple cook until soft.

Add garlic & greens and rice.

Stir in Parmesan cheese reserving 1/4 cup for top.

Place filling into the squash cavities and top with remaining cheese.

Place stuffed squash onto a baking dish and bake at 425 degrees for 15 minutes.
